I’m sorry for the delay folks! It’s been a whirlwind of a week and I had full intentions of posting this yesterday on my lunch hour but my boss gave me the afternoon off, which was spent running around picking up box springs and mattresses and travelling to and from the cottage!! We made it to our final destination (a.k.a Camp Biss) and are settled in for the weekend! Moving on!
In November of 2011, when I was brainstorming which foods I wanted to spotlight for my “it’s MY time to shine” segment I absolutely knew that peaches had to be on that list.
And being that they are in season right now I figured there is no better time!
Let’s get started shall we?
Peaches are a rich source of many vitamins and minerals!
They are a good source of Vitamin A (which is crucial for healthy vision!) and Vitamin C (which as you know is a HUGE protector in our bodies!) and have lower amounts of Vitamin E (which protects our skin from UV light and prevents free radical cell damage among other things!) and Vitamin K (which allows blood to clot normally and protects our bones AND prevents bone mass loss among other things!).
Peaches also contain in smaller amounts Thiamine (vitamin B1), Riboflavin (Vitamin B2), Niacin (Vitamin B3) and Pantothenic acid (Vitamin B5).
In addition to vitamins, the nutritional profile of a peach also includes minerals such as potassium, magnesium, copper, zinc, iron, calcium and more!
Vitamins and minerals aside, peaches are also a good source of fibre which aids in a healthy digestion system…Who doesn’t love that?
Beautiful nutritional profile aside, it’s my humble opinion that there is nothing quite like biting into a perfectly ripe, sweet- scented peach and have the juice furiously pour down your chin.
Peaches are a summertime favorite in my life and I’m absolutely beyond excited to be focusing on them this month!
