The Overwhelming Eggplant

Happy Wednesday everyone!!

I was quite overwhelmed with the amount of people who took the time to EMAIL me throughout the entire month of July to rave about the eggplant recipes I shared with you.

Just like the majority of you who emailed me, I was someone who didn’t enjoy eggplant and ignored it completely when I walked past it in the supermarket.  I now know that I ignored it not because I didn’t like it but because I didn’t know how to properly prepare it!

So today I wanted to acknowledge and thank you all for your enthusiastic emails.  Last month was as educational for me as it was for you and I’m just glad you got as much out of it as I did!!

This month I have been working on some pretty fantastic spotlight recipes and will reveal what I’m featuring likely tomorrow…

But for now a hint:

This morning I started my day with Leslie Sansone’s 4 Fast Miles DVD workout…Truth be told my body (specifically my shoulders and hips) are SO sore from yoga on Monday night AND from running on Monday and Tuesday so it was nice to take it a bit easier this morning.

Breakfast was 2 slices of Squirrelly Sprouted Grain bread (I love love love this bread!) topped with Bees Knees natural peanut butter AND All Natural Strawberry, Rhubarb and Raspberry jam…AND a mystery jam!  Alas, another hint ;)

I am on a jam making roll!

Lunch was the last of the leftover Eggplant Rollatini with some fresh leafy greens (thanks AC! Love you babe!) topped with some homemade greek dressing.

With a side of antioxidants.

Now I’m off to work on our grocery list…And finish up my Spotlight post!

    Our grocery shopping day is Sunday. The store circular and the coupons come in our Sunday paper and I get to work on the grocery list right away. Then after breakfast, Kyle does the shopping :)

      That is awesome! If I sent Jeff grocery shopping he’d come back with cheesy poofs and halloween candy! Enough to last a week of course but cheesy poofs and halloween candy none the less!

    I prefer grocery shopping Friday after work – it’s like a ghost town at the grocery store. Heaven. If only I could get Kelly to do our shopping. You’re a lucky girl, Karen. :)
