FiEsTa FrIdAy!
Happy Friday!
Last night Jeff and I raided his aunt and uncle’s garden
We walked away with a container full of leaf lettuce, spinach and onion tops!
And I’ve got to show you our butt squash plants! We come home every day from work and talk to these babies…Which MAY be the reason why our cucumbers are SLOWLY coming along, purely out of protest
The plant at the far back we call Galdolph (because he’s huge, old and wise
), the plant at the front right we call Mortimer (he’s the one we started from seed that actually grew), the one to the left is Beth (I’m not sure why but Jeff named her) and the front middle plant is LAZARUS! He’s named lazarus because we found him about a month ago growing in our carrot bed (a few plants blew over in April and we thought nothing of it
) and he was raised from the dead
ANYWAY.
My Friday began with me being lazy and staying in bed and it was absolutely divine!
Breakfast was leftover fluffy kamut pancakes (I really need to share this recipe because these pancakes are absolutely delicious!) topped with some bees knees peanut butter and all natural strawberry jam (WHICH by the way, much to my surprise, Jeff ate yesterday and loved…chunky strorberries and all!)
Lunch was a mish mash of things…it’s grocery day so at this point in the week I just throw stuff together
On the plate is half of a tuna salad sandwich with romaine lettuce, some broccoli marinated all week in a homemade greek dressing (so delicious!) and the last of the cherries.
Well now I’m off to put the finishing touches on our grocery list.
It’s MeXiCaN nIgHt and we have invited my folks over for a FiEsTa!
