The Lost Teacher
It has been just an incredible weekend for us.
The weather is perfect, we’ve had absolutely nothing on the “must do” list and the days seem to be moving in slow motion.
What more could you ask for on a long weekend?
I began my day with a beautiful lemon blueberry whole grain scone that I made yesterday.
I can’t help myself when it comes to these scones! The fact is I’m the only one who will eat these and the whole batch is almost gone
I also tried my hand at Eggplant Parmesan and it was incredible!!!
After pulling weeds and talking to “the babies” for about an hour Jeff and I went to the gym.
Three of us ladies sat and patiently waited for our yoga teacher. Time went on and no teacher showed up.
So what happened?
The other two ladies asked ME to teach them because apparently they watch me during all of the other classes anyway.
I knew it would be a shame to miss yoga so I sucked it up, got over my fear and went for it.
And you know what?
It was a fantastic class!
After we got home I made myself a eggplant parmesan panini with spinach and cherries and a pickle!
My afternoon was spent fixing blog pictures from a year ago (grrr argh) and watching Twister with the hubster!
Now I’m off to finish watching Good Will Hunting!

Whoa….you taught yoga?! Go you! I LOVE eggplant parm.
Yes I know! It was terrifying but satisfying…As for the eggplant parm I love it too!
It appears someone needs to become certified as a yoga teacher! Cool! Is this scone recipe on your blog? Also, you should post the eggplant parm recipe, it looks yummy! Keep on rockin!
