Happy Friday my dear readers!
I was up late last night making THIS for our Cinco De Mayo celebration at work today!
That is a beautiful bowl full of beautiful fruit salsa!
Before I get to the festivities I woke up after a glorious extra hour of sleep and made some peanut butter, banana and cinnamon toast for breakfast!
It was a soggy morning this morning. So soggy in fact that as soon as I stepped outside I resembled a wet dog
Naturally we had to make a pit stop on the way to work!
A super spicy chai flavored soy steamer!
Each sip enjoyed while listening to the Mary Poppins soundtrack and while looking out at this gloomy view:
Now on to Cuatro de Mayo
Our Branch Manager invited us all to a Cinco de Mayo lunch today and let me tell you, her spread was impressive!
Multiple kinds of empanadas:
Pico de gallo, guacamole, queso fresco, mexican sour cream, taco chips, etc.
My boss also made corn tortillas and black beans but I totally forgot to photograph them!! They looked so good!
And of course my cinnamon pita chips and fruit salsa!
I didn’t participate in much of it but I did taste her guacamole and it was divine!
Truth be told I was really craving broccoli and my maple baked beans so I had to enjoy my own lunch today
But I had to nibble on some fruit salsa too
After work I came home, did a 4 mile workout and made supper!
Turkey burger, french fries and a cob of corn!
Well now I’m off to enjoy a Friday night with my hubster!
Tomorrow I am going to do some yoga, get a haircut and then spend the rest of the day cooking, baking and cleaning up our house!
