Sauteed Kale
Well I think I’m out of the “Nurse Katie” woods
Late Friday night Jeff turned a corner on the road to recovery from his wisdom tooth surgery and we had a really good weekend all things considered.
His diet consisted of Jell-0, pudding, milkshakes with Vega protein powder and AVOCADO!!! And frozen yogurt blended so it was “soft serve.” What a spoiled monkey

My weekend was filled with fantastic and healthful food, including homemade Maple Baked Beans with steamed broccoli, greek yogurt bowls with banana, mixed berries, raw oats and cocao nibs, Easy Creamy Tomato Barley Risotto and leftover Roasted Veggie Infused Whole Wheat Turkey Lasagna!
And let’s not forget SAUTEED KALE!!!
You guessed it folks! The next recipe for the “It’s MY Time to Shine” segment that I am going to share with you is sautéed kale!
Sauteed kale really is one of those things that you can personalize to your own tastes but I thought I’d share my personal favourite twist.
This is just another delicious way to experiment with this beautiful and healthful leafy green!

Sundried Tomato & Garlic Sauteed Kale
1 Serving (or 2 small servings)
Ingredients
1 bunch of kale, leaves removed from stems and chopped roughly
1 tablespoon olive oil
2 cloves of garlic minced
1/2 cup prepared vegetable broth
1 teaspoon each Epicure’s Sundried Tomato & Herb dip mix and Herb & Garlic dip mix(or any other seasonings you have!)
salt and pepper to taste
Directions
In a large saute pan on medium heat, add olive oil, garlic and stir around until fragrant (not too long…30 seconds-ish!)
Once garlic is fragrant add chopped kale to pan and stir well, coating with the olive oil and garlic.
Sprinkle the kale with seasonings and stir to combine.
Add vegetable broth to saute pan.
Add salt and pepper to taste.
Sautee kale until vegetable broth is gone, kale is slightly wilted and vibrant green in colour.
ENJOY!

I need to follow your kale lead! I keep buying it and then letting it sit in the fridge and go all limp and then i feel really really bad and i apologize to the Kale, lol!
And i forgot to mention i made a turkey lasagna when i was on blogging hiatus, yummmmmmmmm
Wilted kale still rocks though! A lot of times I forget about the kale in my crisper and then I’m left making limp kale chips…But they are still fantastic!
I love this kale recipe! I’m a huge huge fan of sun dried tomatoes..ie I use them in omelets, pasta, on top of salmon, and in sauces. And isn’t it amazing how delicious just a little bit of garlic and olive oil can make something taste?

Mmm, yum! I have a ton of kale right now so I’ll be sure to make this as soon as possible. I never really fancy it up- I usually just roast it with no flavors, so this looks especially delicious.
