The Great Kale Drought of 2012

What a fantastic Saturday!

I woke up, ate this pre workout snack…(half of a thin bun warmed up with a smear of White Chocolate Wonderful natural pb)

And then headed out to another fantastic yoga class!! I really love yoga…I love it more and more each week!

Once home and showered up I made myself a magical bowl of breakfast!

Greek yogurt (plain because the supermarket was all out of honey greek yogurt!), raw oats, thawed mixed berries  and cocao nibs!! Delicious!

Jeff and I lounged around and watched The Sopranos this morning and then it was time for lunch!

I had another “My only desire in this world is comfort food” moment and I conjured this up in my mind…And then in my kitchen within about 5 minutes ;)

Tuna melt anyone?? YES PLEASE!!!

I only ate 1 of these…My eyes were bigger than my stomach!  Leftovers here I come!

After lunch my husband and I continued our hunt for KALE!!  Last night we went grocery shopping and we went to 3, YES 3 supermarkets without being about to find it!

Isn’t it my luck?

It’s the SPOTLIGHT food I pick for January and I can’t find it anywhere!

But two grocery stores later, I found it!!

And I paid about 3 times as usual for it!! It was worth it though ;)

After we were home I made a lasagna while Jefferson watched NFL.

Supper was…YOU GUESSED IT! Roasted veggie infused whole wheat turkey lasagna!

And kale chips!  Recipe/tutorial to come!

You wouldn’t think the two went together but in my house they do! ;)

In THIS batch of lasagna there is a HUGE butternut squash, a zucchini and a portabella mushroom!  AND Jeff absolutely raved about it!  It was out of this world if I do say so myself :lol:

AND dessert!  I was feeling extra frisky today so I made a frozen fruit soft serve (banana and mixed berry) topped with coconut butter and cocao nibs!

Jeff is getting 5 (yes 5) teeth pulled next Friday (4 of them are wisdom teeth) and so this weekend I was going to try making him a milkshake made with REAL FRUIT because, well, he’s going to be on a liquid diet and, milkshakes make everyone feel better right??

Jeff slurped down 2 whole cups of REAL STRAWBERRIES, vanilla frozen yogurt, vanilla SOY MILK and  Vega Vanilla Almondilla protein powder!  I put the protein powder in because I wanted to know how it would taste next weekend.  Jeff likely won’t be eating much for the first few days and he has already requested milkshakes…I want the milkshakes to be as nutritious as possible though!

Well now I am going to watch some more Sopranos!

      It was a great eats day. I have been big time jonesing for yogurt bowls lately. Now I’m all out of yogurt! Jeepers!

  3. oh dear i am so jealous of that kale! since i moved back to austria i havent been able to find any! no kale no kale chips.. i am deprived!!! haha your meals look super tasty!

    I’m sorry to hear that Jeff has to get teeth pulled, but I’m sure a nice cold homemade ‘milkshake’ will do just the trick! My favorite ‘milkshake’ is a peanut butter cup..a frozen banana, milk or almond milk, a scoop of cocoa powder, and a tablespoon of peanut butter!

      Thank you! I love the crunch and deep flavour cocao nibs provide!

      Well the milkshake was a hit! And as far as I am concerned,being that he’s a guy who NEVER eats any fruit, eating 2 cups of it in this milkshake makes me so happy. I’m happy to make these for him when he’s in pain.

      I am going to try out your milkshake soon! That sounds AWESOME!

    Other than the tuna melt (I DESPISE fish), it all looks delish as usual…and kudos to you for only eating half…nice self discipline there! Hahaha…I love the kale hunt, and the idea of picturing you and and your hubby traipsing all over town for it…glad you finally found it though! ;) Hope all the teeth removal goes well…just as long as he’s smarter than me and doesn’t accidentally plan family pictures the day after (true story)! I remember eating special-ordered DQ Blizzards (no chunks) and lots of soup.

      I’ve been really focusing on stopping when I don’t feel hungry anymore…And eating when I do feel hungry. It’s that whole “Intuitive eating” thing. Easier said than done!

      Jeff was not the happiest camper being dragged to grocery stores for “lettuce”. ;)

      I can’t believe you booked photos after getting teeth pulled!!! When I got my 4 wisdoms out, my face was black and blue and I had chipmunk cheeks for 2 days!

  6. Love the tuna melt! It looks so good especially with the gouda cheese on it!

    The milkshake look so good and I’m sure Jeff would love some after he gets his teeth pulls.

      I love onions in tuna salad…Though my breath isn’t the greatest thereafter ;)

      Thanks! I think he will be “milking” his injury just so I will make him these next weekend…Endlessly! BUT like I said, milkshakes make everyone feel better, especially after surgery!
