No Bake Peanut Butter Chocolate Crispy Squares

A few weeks ago I was craving chocolate like nobody’s business.  I know I know.  BIG SHOCKER THERE!!!

Even though I was looking for Christmas baking recipes that were on the healthier side of life, I ended up snooping on Angela’s blog as I usually do when I’m in need of a “sure thing” recipe and found a recipe that was not related to Christmas baking whatsoever…BUT it was definitely on the healthier side of life! AND it was intensely chocolately!

As far as baking goes, I am IN LOVE with the ingredients that are in this recipe!   Soy milk, brown rice syrup, natural peanut butter, dark chocolate, crispy rice cereal and the list goes on and on…It is ALL good! AND it’s super easy and quick to throw together!  No bake recipes rock my world!

These babies are super chocolately, not terribly sweet(so add more sweetener if you want to!),  peanut butter infused rice crispy squares without the yucky marshmallows to bind it together!  The delicious chocolate peanut butter fudge topping finishes off the squares perfectly!

My one piece of advice regarding this recipe:  Once the squares are cut and ready to be stored, throw them in your freezer!  They don’t freeze rock solid and they are AMAZING ice cold!

To give you a little perspective on the chocolate factor, at first Jeff claimed he didn’t like these so much because they were SO chocolatey(and he’s a chocolate fiend like me!)…The next day, the container that I’d hidden in the freezer was empty!   Hmmm too chocolatey honey?? ;)

No Bake Peanut Butter Chocolate Crispy Squares with Peanut Butter Fudge

Ingredients

Squares

1/2 cup natural peanut butter (smooth or crunchy)

1/2 cup brown rice syrup

2 teaspoons vanilla extract

1/4 cup soy milk (any flavour)

1/2 cup unsweetened cocoa powder

3 cups crispy rice cereal

Dark Chocolate Peanut Butter Fudge Topping

1/2 cup dark chocolate chips/pieces (I used Callebaut because it’s my favourite!)

1 teaspoon coconut oil

1 cup natural peanut butter

Unsweetened coconut for sprinkling (optional)

Directions

Squares

Line an 8 x 8 inch baking pan with wax paper, leaving an overlap so you can remove the squares from the pan easily later.

In a medium sized sauce pan on medium heat combine natural peanut butter, brown rice syrup, vanilla extract and soy milk and bring to a boil, stirring frequently.

Remove from heat, add cocoa powder and stir until combined (this mixture will be VERY thick!)

Mix crispy rice cereal into chocolate mixture and stir until combined.

Press the chocolate rice crispy mixture into the bottom of your baking pan.

Fudge Topping

Melt dark chocolate chips and coconut in microwave (about 1 1/2 to 2 minutes) be careful not to burn it!

Stir in natural peanut butter.

Pour fudge topping on top of squares and smooth into an even layer using a spatula.

Sprinkle with coconut if desired.

Freeze squares for about 3o minutes.  This will make cutting the squares much easier!

Remove squares from freezer.  Using the overlapping wax paper pull the squares out of the pan, remove the wax paper and cut into desired sized slices.

Store in freezer and pull one out whenever you are in need of chocolate!

PS and as an added bonus, these babies AREN’T Christmas treats so I can make them all year round ;)

  3. Those sound really good! I’ve been craving chocolate this week, but I’m lazy so I picked up some dark chocolate + caramel + black sea salt bar from Trader Joe’s. Trying it tonight for dessert! :)

  4. Ughhhh these pictures are killing me! SO creamy, SO delicious looking. My weakness is creamy chocolate and peanut butter!

    Yum – those look amazing!! I love the coconut sprinkled on top! Freezing them would make for good portion control too because I definitely don’t trust myself around a whole pan of those : )
