Sweet Potato Hummus
Do you love sweet potatoes? Do you love hummus?
If you answered YES to both of the above questions, run to your kitchen and get started on making this IMMEDIATELY!!!
If you don’t love sweet potatoes, I wouldn’t recommend this hummus. This isn’t one of those “you can’t even tell it’s in there” recipes. No sirree. This is a recipe in which you take a bite and the sweet potato smacks you right in the schnoz! It’s a tad disorientating at first actually. It looks like hummus, it has the texture of hummus, but it has a beautifully sweet flavour-that only a vegetable like the sweet potato can provide- that is mind blowing!
Use it as you normally would use hummus(i.e. a sandwich spread or a dip for pita wedges and veggies) OR you could live life dangerously and sprinkle cinnamon and drizzle pure maple syrup atop of it and dip cinnamon pita chips in it as a sweet-yet-spicy more dessert-like alternative!
The original recipe instructs you to boil the sweet potatoes but I personally prefer the roasting method and so roasting is the method I would recommend here!
Hummus is so very versatile and SO quick and easy to make! Have fun with it!
Sweet Potato Hummus
Adapted recipe from the Power Foods cookbook!
Makes about 4 cups
Ingredients
1 pound sweet potatoes peeled, cubed and roasted
1 19 ounce can chickpeas rinsed and drained
1/4 cup lemon juice
1/4 cup tahini
2 tablespoons olive oil
2 teaspoons ground cumin
1 garlic clove minced
1/4 teaspoon each salt and pepper
2 glugs of tobacco sauce
paprika for garnish
Directions
Combine all ingredients in food processor or blender and blend until smooth. You may need to scrape the sides of the food processor every so often!
Garnish with paprika when you are about to eat it!
ENJOY!!
