Aren’t You Glad You’re You?

Let me ask you something.

In this hectic thing we call life, when was the last time you celebrated who you are as an individual?  How far you’ve come, how many obstacles you’ve overcome in your life or how many times you thought you wouldn’t get through it but did?

If you can’t think of the last time you stopped to appreciate this magnificent thing we call life, here’s something that I think you will enjoy.

My Friday morning started with PaNcAkEs! And they were delicious!

I was iffy as to whether or not they’d turn out as there was no egg in the badder but you know what?  They were perfection on a plate.

Perfection on a Plate Pancakes

Adapted from Angela’s Spiced Up & Stacked Pumpkin Butter Pancakes

2 small servings OR 1 big serving!

Dry Stuff

1/2 cup whole wheat flour

1 Tbsp baking powder

1 Tbsp sugar

1/4 tsp Epicure’s Pumpkin Pie Spice

1/4 tsp Epicure’s Cinnamon

Dash of Epicure’s Maple Spice Dip Mix

1 Tbsp ground flax (optional)*

Wet Stuff

3/4 cup and 2 Tbsp milk*

1 Tbsp vanilla extract or pure vanilla

1 Tbsp Coconut Oil

Directions

In a small bowl mix the dry stuff together. Set aside.

In another small bowl, mix the wet stuff together.

Mix the wet stuff into the dry stuff and whisk away!

Cook as you would normally cook any other pancake!

*Note-If you don’t put flax in your badder, only put in 3/4 cups of milk.  Adding flax to the badder with only 3/4 cup milk will make the badder just a tad too thick!

Toppings

My goodness the options are endless!  Fresh fruit, nut butter, syrup, nuts or a combination of any and all!

Well I am off to watch some more “Sleepless in Seattle” before my lunch/spa date arrives!  It’s Valentine’s Day weekend which means Sleepless in Seattle is a MUST!

PS. I passed my exam with flying colors.  Oh happy day!
