Blueberry Banana Wheat Bran Muffins

As mentioned in my previous post I got home and was itching to get to work in my kitchen!

Sooooo in addition to the Easy Creamy Tomato Barley Risotto I made these delicious babies!  AND I will be totally honest with you, I ate my dessert BEFORE my supper today :oops:

Blueberry Banana Wheat Bran Muffins

12 Servings

Ingredients

1 1/2 cups wheat bran

1 1/2 cups whole wheat flour
2 tsp baking soda
2 tsp baking powder
1 tsp each of Epicure’s Apple Pie spice and Lemon Chiffon dip mix
1 egg
1 tsp vanilla extract
1 cup unsweetened applesauce
1/2 cup Greek yogurt

1/2 cup brown sugar

1 1/2 ripe bananas mashed

1/2 cup blueberries

Directions

Preheat oven to 400 degrees F

Spray muffin tins with cooking spray

In a medium mixing bowl, mix together bran, flour, baking soda, baking powder and spices.

In a separate mixing bowl, mix together egg, vanilla extract, greek yogurt, applesauce, mashed bananas and brown sugar.

Mix the wet ingredients into the dry ingredients and add blueberries.

Fill muffin tins and bake for about 15 minutes or until golden brown.

Once done lay out muffins on a wire rack to cool.

Enjoy!!

First Step:

These muffins, as with all of the muffins I have posted, aren’t overly sweet so they make a great addition to breakfast!  The applesauce, greek yogurt and mashed bananas really provide a nice moisture too(which is awesome because I hate adding oil to my baked goods)!  I really feel good about the ingredients that are in these muffins and would recommend them time and time again.

      Thanks Sandra! These really are awesome muffins. They have a nice spice to them as well…Let’s just say my breakfast was extra yummy this morning ;)

    Looks yummy….what’s white whole wheat flour? Is it at the regular grocery store?

    A typo thats what it is ;) ….I just used Robin Hood’s Whole Wheat Flour.

    Those muffins look so yummy! I really like the addition of applesauce, bananas and yogurt instead of oil too! Definitely going to give these a try!

      They are AWESOME! I ate one for dessert (after lunch) today and I really think this is the perfect bran muffin base…My husband hates blueberries so I think next time I will make a batch with just bananas and raisins, so he can enjoy them too…Perfect!!

    What type of bran do you use? Is it cereal?

    I use 100% pure natural wheat bran…It can be used to sprinkle ON cereal and in baking and whatnot but I don’t think it’s actually marketed as cereal (if that makes any sense…) I think’s it’s mostly used as a fiber additive but don’t quote me on that!

    It’s basically the outer layer of the grain itself (where all of the nutrients are found) and it is just little brown flakey goodness…It looks exactly like wheat germ and in my grocery store (if I remember correctly) it’s in the baking aisle! So high in fiber and delicious!

    Check out Bob’s Red Mill site too…I’m sure I’ve seen them carry wheat bran too!
