Who Could Ask For Anything More?

Posted by Katie on Mar 09 2011 at 06:52 am

Have you ever been driving down the street, stop at a red light, turn to look at the driver next to you and notice that they singing and grooving so hard you think they might hurt themselves?

Well that was totally me this morning.  Grooving to Judy Garland as she sung her little heart out to “I Got Rhythm.”

I will be the first person to tell you that I really rock out while I am driving…Hand motions, Night At The Roxbury Head Bopp-age, the whole nine yards ;)

And you know what?  I truly believe it will set you in an AWESOME mood for the rest of your day if you allow it to.  Now…That being said, if Jeff is in the car with me while I am performing my final concert to a sold out crowd, chances are his mood is going to be not so good having just witnessed something nightmares are made of…BUT my mood will be fantastic!!!

Moving on to my morning!

Not so bright but early this morning I got an awesome cardio workout in and then wolfed down this delicious bowl of heaven while reading most of YOUR blogs!

In the mix are 2 shredded wheat bundles, 1/2 banana, a truckload of pom seeds, a sprinkling of homemade granola AND *exhale* some amazing gooey chocolate coconut butter!! Again, I would be lying to you if I said I DIDN’T save the blob of chocolate to the very end and eat it straight up ;)

One thing you should know about me:

I believe I am one chocolate covered ANYTHING away from a full on check-me-in-to-Charlie-Sheen’s-rehab-clinic chocolate addiction ;)

Lunch today was a SAR delight.  For those of you unfamiliar with SAR, in my world that means Some Assembly Required and you will see me eat these lunches often as they are a definite favorite!

A bean and avocado spread fibre pita with some cucs, red and orange peppers and some citrus on the side!   Who could ask for anything more??  (Thank you to those who recognized that line from the “I Got Rhythm” reference from above!)

I recommend you take the leap and try this out!

Well I am off to finish the rest of my work day.

Are you one of the weirdos that breaks out into random song and dance while driving or am I alone in this fight? ;)

  1. I caught the reference….and yes, I do rock out to ALMOST every song in my car :) No need to feel sheepish about it, only the best do so!

  2. Hilary says:

Love the reference ;) ….and I will sing, only if I am alone though. What’s in the black bean/avocado spread? Is that it, or are there more ingredients? Looks interesting!

  3. Katie says:

Hey Hilary! There’s actually two VERY EASY steps to the bean and avocado spread…Check out either my Recipes page OR this link for the recipe!

  4. I am SO with you on the random break-out of song and dance. I’ve been known to dance to Florence and the Machine while baking cakes (only mildly embarrassing), and also known to break out into Keisha’s “Tick Tock” while driving (utterly mortifying).

Lunch looks DELICIOUS :) Love the rainbow of veggie colors!

  5. Katie says:

Ha! So you’ve got a cake baking breakout tune…but what about cookies? french toast? your amazing veggie burgers? Any of those have a specific artist in which you dance to?? :)

I love eating rainbows…Oh man I’m definitely saving that line for a post title! ;)
